Alfredo With Zoodles: Dairy-Free, Vegan, Gluten Free

Some of you are finding there are not the dairy staples you are used to on the store shelves. Others of you have been dairy free for a while for health reasons. One of the things I love to make without milk is a vegan Alfredo. I know, I know, you can’t make Alfredo without cheese but you can make a really good equivalent.

The first time I made this my kids praised it and said they wanted it again soon. I consider that a win. This recipe is also rather inexpensive which is another win in my world full of overpriced substitutes. So I know you are all wondering how you can get your kids to eat dairy free vegan gluten free food and enjoy it.

Set out a cup of cashews to soak in some water for at least an hour then drain. Add drained cashews and all other ingredients (besides zucchini) to your blender and mix well.

Warm sauce in a pot over stove if you feel it necessary.

Use a spiralizer to turn zucchini into noodles

Saute your zoodles in a pan with some coconut oil but avoid overcooking (5-7 min.). 

Serve sauce over zoodles.

This super easy "alfredo" recipe will have you enjoying a comfort food in no time.

  • 1 cup soaked cashews
  • 1 cups almond milk
  • 1/2 cup water
  • 2 tbsp olive or grapeseed oil
  • 1 tbsp minced garlic
  • 4 tbsp nutritional yeast
  • 1 tbsp dehydrated onion or 1/4 cup fresh yellow onion
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 2-3 heads zucchini
  • 1-3 tbsp coconut oil to saute


  1. Cut zucchini into spirals and saute with coconut oil. Put all other ingredients into a high speed blender and blend until smooth. Warm on stove if necessary. Serve sauce over noodles.
